I think one of my plants made some bananas

Hello, one of the plants star to make more pistils and I think a bananas, this is their last week and I will harvest this week, does this affect them?

Correct, they are male stamen/bananas.
At this late stage you have nothing to worry about, they will not be able to produce any pollen before harvest, and even if they did, seed formation takes around 5 weeks, meaning your plants are in no way able to make any seeds before you harvest them.
The stamens will not affect potency or other qualities and will not induce hermaphroditism in any other plants that may be growing in the same space.
