So while initial growth above ground may look "underwhelming" it's just because the plants knows its priorities. After roots are more established it'll pump out foliage very quickly.
Yours looks very typical (and very healthy) at that stage. As someone else said, usually only at about weeks 2-3 will you start getting more significant foliage growth.
