Inside of the canopy is pretty light green. Is this due to light penetration issues? Now that I have defoliated some, will they get darker?

Dark green leaves are not something to be desired, they are a symptom of nitrogen toxicity, meaning too much grow nutes. Light green foliage is much better. Unless of course you mean yellowing leaves. Your pictures look great, don't worry.

Yes as the leaves mature they will get darker

From what I can see theres nothing up, just new growth. Give those leaves a chance to open up and be exposed to light before you start assuming deficiencies and overfeeding. So far you have a beautiful looking crop with no outstanding issues. Light penetration issues at that height, you're overthinking the situation. Keep going as you are.
