My seedlings are just over a week old now (9 days), when do I start watering the roots instead of spraying them and keeping humidity high?

You can do that now, but try to water baby plant within 2-3 cm radius from the stem-that will help roots grow fast when searching for water nearby.

Now, they need water down deep, something that spraying does not achieve.

Some green showing on the dirt around the main stemI noticed there is some kind of green (like very tiny plants) forming around the main stem of the plant. Two seeds(different genetics ) rooted healthy the same time in paper towel and transplanted same time in coco.
