Humidifiers produce steam, which is pure water vapour, which can not/does not carry anything in it. Humidity can not affect pH or nutrition. The picture shows a calcium deficiency, add/increase your cal/mag dosage and your plant will be happier. Plants do not absorb moisture thrrough their leaves, but too high humidity can slow transpiration.

If I'm reading you correctly, you are thinking that because your town water was 8.3ph and you watered with 6.2 that it resulted in the plants getting 7.2.... is that a calculation or did you actually measure the PH of your runoff? I used to do that - because I didn't have a PH pen so I was just estimating... and I was SO wrong! You've got some problems and I think the issue is the PH (which you think, too)... you've got to get a PH pen so your measurements are accurate. I like Apera because it's just as accurate and reliable and easy as Blue Lab but doesn't cost as much. It's worth the investment!!! Get your PH under control and go from there.... and no, your humidifier has nothing to do with the PH of your soil! Best of luck!
