Your dehum should be plenty strong enough to control the RH.
a 50-pt (newer US standards, used to be a "70pt" size a few years ago) can handle up to 40sq ft of canopy, but that would only be in a dry climate (e.g. my winter seasons with house furnace causing resting RH of 30-35%.) Just to help size it 2 small plants = no problem whatsoever.
I'd just use the bigger tent and "mostly" light proof the outer room. That's the actual volume you have to control for temps/rh anyway, unless piping exhaust elsewhere.
Can always hang some cheap poly film (panda film) If you want a "4th wall" bouncing light back at plants. Doesn't have to be floor to ceiling, just a few well-positioned feet would be enough. And keep all the equipment inside.
odor control -- a quality carbon filter -- not all are made equally. Negative pressure in tent will eliminate odor leaks. As long as the carbon filter is appropriate size and rating for the CFM of exhaust, should be fine on smell. Some filters skimp on the active carbon and they are less effective. Some people use a "170cfm" filter on a larger 300+cfm duct fan, and that too will be a cause of ineffectiveness. Stick to specs and ask manufacture how much tehy put into the filter.. in grams.. compare with others.. more grams of active carbon = better at eliminating smells.
