I'm seeing some discoloration, and it's spreading to the newer growth. I have been watering at pH 6.5, but upped water to completely soak the medium. How much should I let it dry out between waterings? Organic dry amendments, mycorrhizae, and CalMag.

I think that they will need some extra nitrogen in your next feeding except if you have some in your organic amendment. If you can low your ph to 5.8/6 it will be perfectct ( 5.8 is the coco Sweet spot )

No worries since your using dry amendments. It will take time for those to work its way into to soil. But if ur not using it yet start and always go easy with nutrients that young. And as for watering I ALWAYS lift pot method. If u can lift pot easy without any effort it's time to water. But if u have to actually use your muscles then even slightly it's not time. Another thing when there that little try only watering them in a 3 inch small circle around plant till they get twice that size.

I would think about adding nutrient soon, but keep the pH below 6. I do a mix of coco, soil and Perlite so I water at 6.5. But it's natural compost. And I always give quite a high dose of nutrients throughout (because coco is inert but I do have live compost too), really I just use the coco to lighten up the mix.
