New growth looks light green after transplanting, is this normal? I don't think the soil lacks nutrients, the plants also get enough light.

It could point to an issue like pH or root damage or it might just be a little transplant shock. I'd wait to see if it darkens up with growth or if it becomes more of a trend. I will tell you planting straight into the ground generally leads to lots issues unless you dig out a pretty good sized hole and replace the dirt,, even then if you have a lot of clay you can have drainage issues.

If you just planted them in the ground and did not add anything to the soil before transplanting, like aged manure and compost or worm casts etc, then yes, it is quite possible the soil is missing some nutrients, which is why the plant is pale and reflecting this fact.
