Cherry is notoriously difficult to replicate using terpenes, largely because the flavor profiles that associate with "cherry" are based on the pit (seed), not the fruity pulp, and rely on a high concentration of a single, bitter compound called benzaldehyde. Considered a trace compound, and one that degrades into benzene when heated which is highly carcinogenic.
