Pistils can be a clue, if you noticed that new pistils have stopped appearing and old pistils have almost all turned red/brown and curly, but the best way to ensure it's the right time is to look at the trichomes with a magnifier/microscope. Clear/Transparent/Thin trichomes mean it's too soon, Milky/Cloudy/Fat trichomes mean the harvest window is open, Amber trichomes mean the harvest window is ending, and THC is degrading (less THC, more CBD/CBN). As long as most of the trichomes have turned from clear and thin to fat and milky you know the 'harvest window' is open, even if you don't see any amber. Harvesting too soon (too many clear trichs) will result in a uplifting/energetic effect but you will lose some terpenes & oil potential. Waiting longer (too many amber trichs) will result in a heavy stone/couchlocking effect. Hand-held microscopes can be found for a few dollars on the internet or at your local growshop.
