I have two more questions: first, what are the brown/gray leaves on the small plant? What did I do wrong there? And with the big plant, is there anything left to save or is it done for? I'm still trying with the growing, but I must be doing something wrong.

Dont worry about the baby, some plants have different growth patterns looks so on, the bigger plant looks way too tall (searching for light) and to answer you just water your plant with plain ph wayer about 4times the pot size to wash out unwanted nutrients in the soil example 5L pot flush with abt 15 -20L ph water , cut your nutrients back a bit by 15 %

And how do I get rid of the nutrient excess? I used regular potting soil with a relatively high N content... and a bit of herb fertilizer... :/(

Nutrient burnin is what it looks like.. Seedlings are very sensitive to nutrients... And the plant height of that one guy says hey I am not getting enough light so I'm gonna keep on stretching to get light. Window growing can be down with Cannabis but only in regions with plenty of sun.(Not my region.) Or your led/light source sucks either way that's what that is saying.

Weak StemI watered today with my sprayer & one of my plants fell over, is this damping off or am I supposed to prop it up somehow? The other ones are fine.
