is that coco? if not prepared right, it will hinder growth for a while as the exchange sites get into proper equillibrium, in meantime could cause K-tox.
seed doesn't need nutes for a while, and coco is typicaly buffered, if prepeared well by manufacturer, so you only need pH'd water for 2 weeks.. let cotyledons dictate.. fade onthose, start up, since coco provides nothing on its own.
don't let coco dry out like soil. go more by weight of wet and dry-ish.
evaporation could cause what you are seeing too by increasing concentration of what is in the substrate.
i know not a decisive answer, but just eliminate the possibilities that you can with information you can't be expected to type out in such verbosity.
