Can I just remove all these fan leaves now that they serve no real purpose? Few weeks in flower now so I can't see why not?

The leaves are responsible for photosynthesis. Your plants are always better off the more leaves they hold onto. Only cut off a leaf if: It's blocking light to bud sites You need to open the plant up for airflow The leaves themselves are getting no light so can't be productive The leaves are sick and dying As part of a whole other training method, like lollipopping Otherwise, she's better off with the leaf.

First I like to try the tuck in method but if I have to remove them I take the ones that are covering any bud sites and the ones that are not getting any direct light or if they hang down wards remove them as well. Think of the fan leaves as solar panels they are the main producer of photosynthesis they convert all the starch into sugars so don't take all of them off.

They have a purpose, they are absorbing the light. That being said I take them off if they’re covering bud sites or to improve airflow.
