Should I defoliate the leaves below the canopy? The ones that aren't getting much if any light? If so: How much and when?

Absolutely. If the light isn't getting there, clip them off. This will also increase airflow throughout the plant. Clip off anything that doesn't get light and go slow. If there is lots of plant that needs clipping do it over a week if you are not familiar with defoliation. Less stress on you and the plant. Looks like you are still vegging so your plant will be more forgiving. The next time to defoliate would be right before flowering. This way you can clip off any leaves that may be blocking future bud sites. After this I do again between weeks two and three and one last time weeks five to six.
