Plants can take a while to recover from transplanting, up to a week, especially if the roots were disturbed.
Filling your pots right up to the top would have provided much more room for root growth.
Bigger roots = bigger plants.
Also by sitting up higher in a full pot, the plant will receive much more reflected light, accelerating growth, rather than it is now, whereby the plant is behind the walls of the pot and in shadow of any reflected side light.
If she didn't get a decent watering after the transplant, this too could be a reason for the funny leaves, presuming she had normal leaves before being transplanted. If she has always looked like she does now, I personally would pull it out and plant a new seed or two. Not all seeds will produce perfect plants and this particular seed may just be the proverbial "bad seed".
