Red stems are usually genetically related and perfectly fine, but can also be a sign of phosphorous deficiency, which in this case, is probably the most likely reason.
Either way, they certainly need more NPK and more water too.
It is not light related and I would be putting the other light back in, lumrns = health.
In reality, red stems are not an issue worth worrying about, it is more fear mongering.
