When you buy spring water, how can the company say it's a certain pH if temperature affects this ? I'm struggling to understand how temperature affects water so much. Does the heat make ph rise or fall ?

Inversely related. So, temp goes up, pH goes down. increased H+ activity, therefore more hydronium formed on average in any 1 snapshot of time.
