The pistols play only one role - reproduction. The pistols are the one that are trying to catch the pollen from the male plants and then produce seeds. Nothing more. The pistils are not something that you should worry about.

is it worth letting the rest over-ripen for afew new calyxes?
even less so if it foxtails, as those are usually larfy, but not always. I've had some knobby weed that got dense even on the knobs. LA Peyote ?kush? by seedsman did it. (LA peyote - whatever it's called)
each to their own... my 2 cents is not focus on ripening of the bulk.
