Looking at plant 2 on day 18, it appears the leaves are starting to stand up, pray, sticking up, etc. What could be causing this? I'm using T5HO lights. Total of 210 watts. Is she getting too much light?

Hi there ! It could be the heat ! But it could be also the signs that she need water , as plants are "praying" to limit "sweating" ! Hope it will help you 😁👍

It means they are doing great. It's commonly referred as praying to the sun / light. Don't worry.
