Do I have too many leaves? Should I have been more ruthless in the early weeks of the flowering stage? I also have variegation on one of the plants, is this a disease or deficiency? The plant seems healthy enough though

Well you do have a glarin nitrogen excess, see those really dark green leaves? As for the leaves, defoliating is a controversial technique, many people think it help, many do not; I'm still unsure, having tried it before. you might want to pluck a few leaves to keep the humidity down and avoid wet leaves or buds. As for variegation, I could not see it on your pictures and this far in flowering it's probably completely normal; I think you should stop feeding and flush the plant.
