If you go with organic soil, you often don't need to do much beyond compost teas and then soil augmentation in-between grows with organic matter like compost, kelp meal, bone and blood meal, and worm castings. It doesn't hurt to add some of that good root fungus I can't spell. Starts with an M. As far as watering goes, some sort of wick system is wonderful because it makes it very hard to under or over water as long as the reservoir is filled and cleaned regularly. You can add nutrients directly to that as well if that is the route you go.
