If you're trying to do a defoliation, you can cut out leaves blocking the light, but try to do less than 20%. You can cut out the bottom leaves to do a "lollipop", which would be cutting away the bottom most leaves that won't get good light or big buds. If you're trying to "top" or "fim" you will cut out the very top tiny bit of leaves, no bigger than a pinkie nail.

Do you mean defoliation? If so I would only do it if you have so many leaves that they are blocking air flow.
