Bigger stardawg hermed so I took the male bananas and put them in a bag because I know they contain pollen. What would be the best actions to take to just play around. If I backcross the pollen to the same strain will I create S1 seeds?

@dutdut day-neutral(Autoflowering) genetics are naturally recessive to being homozygous(stable) therefore when breeding with any-form of Photoperiod the Autoflowering genetics are abundantly recessive. Given that your plant has hermied its like to hermaphrodite again because genetically its not a stable phenotype meaning it could also contain the photo-period genetics as well as the unstable hermaphrodite traits. I wouldn't waste the time personally! But for science maybe!

Hello ! If you cross your hermie to herself you will have an S1 batch of seeds with big chances to have an hermies S1 generation , however if you take a look at Tazard Acid dought S1 diary you will see that it does not turn hermie like the parents ( if I remember well ) , and I also know that some breeders are selling S1. With S1 you are supposed to have a copy from the plant with almost no phenotype variations. But if you cross your Stardawg to another Stardawg then you'll have an F2 lineage ( if we suppose that the Stardawg is an F1 ) but with a high proportion of hermies. I personally grew some White Yoda S1 seeds from one of my plants and the second generation was 80% looking like the parent , 95% the same taste and effect but a bit less powerfull, 3 out of 6 were hermies like the momy.
