You can do but I would definitely start in a small starter pot as it makes life a lot easier. A small plant can get over watered in coco although once it’s established it’s very unlikely.

Yes, pay attention to water only around the seeds roots and not the entire medium

To harvest or not to harvestAny opinions on whether I should harvest based on the pics I posted.
