You have answered your own question, why not give them a big water drink and see if they look better after that.
Coco coir is not soil, but crushed up coconut husks and has no nutritional value, but does provide excellent drainage, so giving a big drink can not harm your plants. If they do not look better 2-3 hours after a big drink, then you have other problems and will need to ask further questions. Without a diary and more information, there is little else to be tried without giving them a good deep drink to start with. However, I think your plants will be OK once you give them 1.5 - 2.0 litres of water and they become rehydrated. Each time you water, there should be water coming out of the bottom of the pots, otherwise there is no way of knowing if water is penetrating the whole pot, from top to bottom, as this is where the roots will be.
