pH level on a coconut substrate = depends on the balance between potassium-sodium and calcium-magnesium.
If the balance is maintained, the pH level will be good.
Use coco fertilizers, add cal-mag and silicate, feed well = and all be good.
and if you see a low pH in drainage = this indicates problems with feeding.
Hi mate, you dont need to check the substrate but you are required to maintain it between 5.5-6.5PH bracket. More specifically 5.8-6.0 for veg is optimal and 6.0-6.2 for flower. Most people monitor this via the runoff.

The simple answer is that PH doesn't matter when you grow using organic amendments in COCO. However it appears you are using synthethic nutrients so you will most certainly need to PH around 6
