Not the white hairs, also known as the Pistils of the flower.
Pistils can dry up for many reasons and there will always be some fresh or white ones on the plant.
As for trichomes you will want to have about 10-30% amber. I like lower around 10% and you want to base this off of trichomes on the Buds themselves for the leafs.
Note that trichomes will ripen faster on the upper most part of the plant first before the bottom. Your can harvest half of the plant one day and wait a week for the rest to catch up if this really bothers you.
Google, cannabis trichomes chart, this will yield you some visuals of what to look for.
You may also need a magnifying glass to see them.
