My two Grandaddy Purple Autos are light green/yellow in color. Is a lack of nitrogen the cause or is it something else? What do you recommend to fix the issue?

Light is too close too soon. Apparently the others did not take the time to look. You got light stress. Should be at 14 to 16 inches in heavy flowering.

Start again. All those leaves you removed were making the energy your plants need to grow. Less leaves = less energy = less growth. They also need some serious feeding, all sorts of deficiencies, but probably too late to recover any great health now that they are flowering. Sorry. Continue if you are happy to harvest a couple of spliffs worth, I can't see any potential at all in these plants and I doubt there is anything that can make them grow decent flowers, they are just too far gone in my opinion. Leaving a grow set up and running for 30 days unattended is a gamble I would not be prepared to take........... electrical fires are a real danger. Sorry for my blunt assessment.
