Pic 2 is not of pistils but of what is known as "stipules", a growth cannabis gets at the nodes and these have nothing to do with flowering or the sex of the plant.
The fact that some are brown is of no consequence, they have no function that anyone can determine.
Pic 1 shows a healthy white pistil in the background, pistils will always be associated with a calyx/bract/pod.
You have nothing to worry about, they will not go brown just by being touched either, unless you squash them. They usually only go brown once pollinated.
