Ready to harvest? How should I dry it while the other finishes in the tent?

Two plants, one looks ready, what do you think? If I harvest it now, how should I start the drying process since the other one needs the tent to finish? Last photo is of the other plant that isn't ready.

Started cure to early?
Started cure to early..... ? I hung them to dry. After 5 days i noticed they were super dry :-( So i removed them and put them in jars. But after 2 days the humidity in jars is rising 70% -80% with boveda 62% inside! I have now removed from jars amd put them into cradboard box

14th day of dry. Small bit of offcut bud reading 58% in 1 ounch grove bag overnight.
14th day of dry. Temp/RH have been around 60/60, but not getting snap from stems. Did trim yesterday and took a good deal of dry leaves by simply pulling gently / running the scissors over them. Would you cut and jar at this point or leave until stems are brittle?

What to do with smaller flowers during drying vs larger colas? And how do you get large colas in jars? I assume I have to trim them too smaller size right?
Ok so drying on day 3/4 now and still too moist i can tell. But my rhetorical question is obviously the smaller buds will dry faster than the bigger and main colas right? Do I need to start jaring the smaller flowers then work to the bigger ones? Or all at once? Also, i assume...

Wet or dry trimming outdoor drying
Should I wet or dry trim flower in hot weather when drying outside? Unfortunately I have no choice but to dry my flower in an outside open sided shed. With average temperature 30c/15c, humidity around 65%. Location has natural wind coming through.
