Why are the tips of the new leaves pointing down? The plants are a very good color and size too.

I would say its a combination of wind burn and low humidity for the temperature. VPD charts show 27 @ 55h rh would be around 1.5 kPa which is very close to the danger zone. either lower the temps to around 23 or increase humility to 65. If all of the plant is showing the claw then I would agree with AlicePhaedrus. This looks like it may be the first stage of nitrogen overload. https://www.growweedeasy.com/curling-or-clawing-cannabis-leaves You may be overwatering the plant a bit too. Let the topsoil go dry about as deep as the first knuckle on your finger - half an inch or so.

Humidity 55% and temperature 27⁰ But I don't think that's it because out of three plants of the same genetics, only that one has happened... they are in the third week of flowering and I've given very little fertilizer so far...

Could be a number of things, my first guess would be wind burn. Could also be nitrogen toxicity. Low humidity and high heat. What's your temperature, humidity, feeding amount
