Help understanding PH

I have big problems understanding my PH levels. I put in @5.5-5.8 PH (lowered with acetic acid) and the run-off is always too high, about 7-7.5 PH. I started testing my water / nutrients by intervals and nothing makes sense to me. Every test shows an increase in PH, up to 2.7 up?

If you are starting with water at 8 or 9 pH, you have a big problem. Adjusting your pH with acetic acid (vinegar) does not work to stabilize pH levels long term and I believe a "pH down" additive based on phosphoric acid will keep pH stable for much longer. Also make sure to adjust your pH last, after all the fertilizers are added to the water. At this stage you will have to flush heavily with pH adjusted water (containing phosphoric acid) until your run off reads 5.8.

In my current Royal AK grow, I water with pH 5.5 and runoff is 7.5. The soil is bad, with too much pH-stabilising additives, so I have to stick to 5.5. The plant is a beast now, while few weeks ago I thought it’s gonna die.

That means your plant has all the nutrients it needs. The reason it's high on the run off, the plant is only consuming the water not the nutrients.

Your in coco. You need to strong flush the substrate with low pH till run off is right. The reapply nutrients. If pH is climbing you likely need to add more feed. Your pH will directly be effected by amount if feed. I grow in coco regularly.
