The first week after flip is boring - just a continuation of the last week of vegging - but you should notice the plant start to stretch quite considerably from the end of week 1 until the end of week 2 or 3, depending on the strain. Once the nodes start to tighten up again at the top of the plant, the stretching is coming to a climax and flowering will begin in earnest.
Your plants looks healthy, so I don't think you've created any problems by defoliating it when you did. I (lightly) defoliate and LST my plants almost constantly in the first two weeks of flower to keep the bud sites open to light and air and encourage more side shoots to rise to the top. I stop removing fan leaves or LST'ing my plants 2 weeks after the 12/12 flip took place, as the plants generally won't fix themselves after that point as they focus on flowering.
"Topping" and HST on the other hand is different - I recommend topping your plant no more than 2 weeks before you flip to 12/12, otherwise the plant won't have time to recover and this will affect your yield from the main colas.
