When there is a pistil coming out of it you don't need to worry about it being a male sac.

They are female calyxes in pic one, not male flowers....but not 100% sure of what exactly is in pic two. If you go to week 7 in my diary "cannabis conundrums", I have posted pictures of male, female and hermaphrodite flowers and these may help you identify what is going on with your plants.
