Leaves+stem drooping, stems did turn purple - caused by climate change? or watering problem?

what should I do? history: 21.05. Water with full dose of fertilizer ... 26.05. Soil really dry - Water with half dose of fertilizer 27.05. Plants look super healthy (24°C 55-60%RLF) 28.05. started to droop (27°C 40-45%RLF) 29.05. even worse, (25°C 45%RLF), surface still moist

Make sure to get 10-20% run off each time you irrigate too, this is essential for plant/soil health.

Sever nitrogen toxicity.........over fertilized. In soil, a schedule of plain water/plain water/feed/plain water/plain water/feed.......works well.

Might have been to much water and this is the aftermath of it. Limp Leaves + Stiff Stems "petiole" = Overwatered Extra Limp Leaves + Limp Sterms = Underwatered Watering in a medium that holds a lot of water can be tricky, normally more perlite is needed then multiple smaller watering's are done, or an auto watering setup. Give them time to suck it all up. Keep up the extractor fan to increase air flow and encourage transpiration. Next time water less and more frequently. Good Luck!
