IMO - never a judge a plant's ripeness by the colour of the pistils. Your best gauge and indicator is always going to be the trichs when viewed through a jeweller's loupe. if you've got 20% amber on lower growth that's getting less light than I wouldn't waste much more time and just chop it. That's coming from the perspective that I don't mind the occasional plant being a little less mature and having somewhat "racier" effects than typical. Based on the leaves though, she's already faded quite nicely and you might miss your window if you think she's already running late.
