that's a bit of dangerous knowledge applied as a one-size-fits-all simply stated answer... so, consider context and see what the company has to say about it.
they sell ph-up and ph-down, so you can definitely use it, of you want.. you do not need their specific product, but you'll want to look at what the ingredients on your labels to make suer any precipitates won't form if you use something else. Acetic acid is a good option and won't cause too much issues.
your 7.8, that's the tap or tap+ferts.. because, 7.8 isn't so bad if only tap water. My tap is 8.4pH and 250-300ppm hardness, lol. or, is that pH in your soil? those meters aren't so good, if it is.
water with pH in expected range they list - 6.2-ish (*it was in link up top, if wrong here). If ferts and your tap don't get there after mixing well, add a ph-up or down to get to that value.
They tell you the pH their product should be used. Listen to them over any one-size-fits-all suggestion. if you consistently run into issues, then you can fiddle with this a bit to see if it helps.
pH, concentration and ratio of nutrients are equally important to availability of each in the plant. any one of those can cause any and all leaf symptoms even if that nutrient is abundantly present.
