Do not worry, that's perfectly normal after topping or fimming. The new growth will look strange until it grows and it's big enough it's basically regenerated and new growth will be normal after some time. As long as you see this kind of green on new growth, you know you're taking great care of your plants. Keep on that track! Happy smokes!

Looks like overfeeding to me. You are giving them too much nutes. Get an EC/PPM meter and let the plant feed itself from the soil. resume feeding only once you spot the first signs of deficiency.

The sets up leaves that pop up right after topping (or especially FIMming) can look weird. As long as it doesnt continue into the next set of leaves after the first new sets. Also just wanted to point out that it looks like your nitrogen levels are running hot. You might start getting yellow and brown tips along with downward clawing if it continues. Looks like you're good though and the topping was successful!
