When the trichomes look "milky" or cloudy and most of the pistils are orange. Some sativa's will always have white pistils even when finished so that's not the most reliable method. Get a hand held microscope!

Alex, you still have some time to go. She’s young but still needs some time to mature. I personally like to harvest the the top full buds and then allow the underlying flowers to absorb light and mature. Chevron has given you some good advise. Your trichomes are clear to white, some amber colors starting, but let her swell and turn color. Repost future pictures. Stuff looks great so far. Nice frosting.

What do you mean by 10%/20%/so on of the trichomes? Is it a percentage of all of them or each individual trichome?

Two ways. Easiest but not accurate: wait until 90-100% of the hairs have turned red and begun receding back into the flowers. Better way: use a jeweler's loupe or magnifying glass to look at the trichomes. 10% Amber is your highest THC content, psychedelic head high 20% Amber is a nice head high with some relaxation effects 30% Amber is a healthy mix. 50-70% Amber heavy body high, couchlock, munchies, sleep aid Over 70% Amber you've waited a bit too long, this will knock you out
