Taking any healthy green leaves off will just reduce your plants capacity to produce the energy she needs to grow her biggest and best.
Try only taking any yellow leaves off, for by the time they are yellow, they have served their purpose.
Personally, I only remove the leaves after the plant has been harvested and dried. Your flowers will be better protected and dry more effectively with less degradation of cannabinoids and terpenes if leaves are left on whilst drying. They will also dry faster, due to the leaves providing a much larger "surface area" for the water to escape through, rather than the water having to escape entirely through the buds, which can also remove some terpenes and accelerate cannabinoid break down.
If your plant is still in growth or flowering, leaf removal can result in slower and/or smaller growth.
So, remember - maximum amount of healthy green leaves = maximum energy produced = maximum growth.
This is basic plant biology that, in my opinion, advocates of defoliation techniques fail to fully understand.
