They are certainly ripe enough for harvest now and will have peak THC, providing a great trippy head high, but this peak of THC will be declining from now onwards, due to the plant being past its prime health and with a slowing metabolism.
Leaving the plants much longer will see the THC breaking down into CBD and CBN, giving you a more sleepy/heavy body stone.
So it comes down to which effect you prefer, a mind bending high or a sleepy body stone.
If you prefer the body stone effect, wait until all the pistils have turned brown.
