One of my plants (#2 in the photos) seems stunted and is curling/clawing. I know that is a sign of overwatering, but it has been watered only once in 7 days - the first day it was planted (and only 100 mls of spring water). Any other ideas? Thanks!

My guess it was the one with the corkscrew roots. Root issues. I just had one do something similar. I pulled her and popped another seed.

I have had this happen to me a couple of times. In one case the seedling was not viable, and in the other case, she grew as a runt for a while, and then she just took off and grew very well in flower stage. I would suggest you wait it out, stay the course etc. If the other plants are growing well in your grow room, then I would ride it out.
