When it comes to drinking, three things are important for plants: the pressure in the roots caused by water uptake, the capillaries, which is a vascular system that runs throughout the entire plant, and the negative pressure in the leaves, caused by evaporation.
So don't worry, you might pile up a bit of soil, but it shouldn't be necessary.
