Most def you can. In fact thats how I always harvest given a choice. Take the most mature looking buds when they are ready and leave the rest up to 10 days longer. Harvest any when they look good in that time frame. Or yeah it is possible to re veg and re bloom a plant if you want to, you just harvest all the main buds, and switch the light back to 18/6 or 20/4 and she will go back into veg, make sure u switch back to veg nutes too ok, and she will go back into veg within two weeks. you can then re veg her up to 6 weeks and switch back to 12/12. Dont expect a huge harvest but its def a way to re use a nice root system twice if you look at it that way. Ive done it while I had clones growing out with the mother plant. Can you do it? totally yes, would I do it? Only if the buds were truly amazing, then yeah.
