Its up to you when you do it, some people say doesn't matter, some say week 2 or later. I will usually wait until the stretch is done. I find that any heavy defoliation/high stress training will stunt growth for a few days. If you do it mid stretch it may be detrimental to your overall plant growth/yield. I would wait until they have stopped the rapid growth phase at the start of flower (stretch) then defoliate fan leaves and strip lower branches and bud sites that are not getting much light, they will end up being fluffy popcorn that will be a pain in the butt to trim or will just end up in the hash/edible/trim pile.

I only cut off the flower spots from the bottom of the plant that don’t get light then when should i do this now? do I have to wait another week for the plants to reach their final height and only flowering will be their main task? is the second week of flowering suitable for this? i am sending a video to see what the guy did on the 21st day of flowering LINK= https://youtu.be/EtnYVveOLcw

Personally I try to do it a week before flower so plant recovers and gets her stretch without any hindrance. If I can't or something else happens that changes timings like a branch snapping I will do it after the stretch is done 7-14 days strain dependent, once your plant stops stretching you should be fine to lollipop.

more art than science... depends on growth of plant. Some continue vege growth for longer than others after flip (or an auto transition length varies etc) you'll be fine. do it again later too, if needed... reducing risk of microbial infections is typically a positve. have a reason for what you remove and it'll turn out well.
