not helpful.. if a plant hermies with minimal stress, i hope, then it's a bad trait to pass on. Bubble hash is an option, because it doesn't apply heat nor pressure to the plant material. relies on ice cold water knocking trichomes off surface of plant material -- the least amount of damage donen to the plant material, the better the quality of hash. (i.e. don't use jagged ice, don't stir too hard that it breaks it down too much.. etc etc... the melt should be mostly melted by the time you stir. add more each cycle to keep it ice cold.) This is an option if oyu can isolate teh plant. some nanners are importent, but those look pretty substantial... i'd err on safe side if the nanners are all over or sacs are forming... if you cannot isolate, toss it... if only a few nanners, can try plucking them each day.

Mate if you only have problems with 1 plant from experience get rid asap and concentrate on the good ones if any get missed and pop then the whole grow will be full of seeds then that's hard work cleaning and scraping every plant to start over I lost 28 Christmas day to hermie pollinated the others and any cuttings that were from the hermie plant the lot will be rubbish get rid straight away cos any pop then no decent weed all you get is hermie seed that are also useless and will be hermie again sorry happy growing

Few banana in the bud near the end of flowering is something pretty common with some phenotype. Most of the time they don't get enough time to get mature enough and drop some pollen. Just remove them as you did and you should be fine till harvest. You just need to pull out the banana with some tweezer, without removing part covered in trichs, they come prtty easily unlike female flowers.
