To answer your question about the broken (bent) branch; dont worry about that, the plant will recover quickly even without your help. I use to bend my plant's branches to even out the canopy, it's a tecnique called supercropping.
Like i said, your plant will be fine 👍 the place it bent will get harder and more robust then the rest of the branch..

Lol been there done that. I usually use surgical tape to re attach it. Helps it breath but gives it support.

Advice on defoliation/LST - getting too chaotic hereIs it fine to cut off some of the big fan leaves this early or should i just tie them down to expose the tops to more light?
