I believe your plants are doing great. Let it mature. Defoliating in the middle of flowering is very risky due to photosynthesis, you do not want to delay bud development, leaves will not grow back. So choose carefully if you do.
Yes they look fine. your plants have enough leaves for photo synthesis and in a week they may have just as many after defoliation.
in your first picture you can see that the light is only reaching so far down and so the buds will not form down there.
it does look like you did a pretty big lollipopping but you may need to remove some more leaves in the middle to get some more light penetration in the
