Firstly, this is an excellent grow to date my friend. Space is clean, and plant canopy is beautifully even. The photos are gonna dictate my answer on this question. My only advice is that you're now in week 5/6 of flower. At this point the plant won't be producing any further fan leaves so what you remove, ain't coming back. Realistically, a plant in a controlled environment shouldn't necessarily need any fan leaves - the argument being that these are nutrient storage locations and storage is not required when the plant is provided what it needs at all times. In practice however, the appropriate amount to defoliate at any time and at what frequency is very much grower preference. The plant won't necessarily suffer when you take the approach that less is more (on both counts). The real answer to your question is that it depends on you and what you're comfortable with. If it were me, I'd run back every large fan leaf on the plant, get rid of anything else in the middle that's mottled or twisted as well. Might as well do it now as these are going to have to go in like a week or two anyway to maintain appropriate airflow under the canopy into late flower.
