You will want some rubber coated wires for your plant to feel comfortable with, but I guess you can also use the ones you already have, as long as they don’t have cutting edges that may damage your bby. I just wonder if it isn’t a pain in the ass to bend those steel wires.
As for the LST just gently bend her one side and tie up the base of the stem so you won’t hurt the roots. Than you wait for her to push back and basically just continue with the LST until aprox. the middle of flowering stage when she stops growing.
However I’d wait a bit more if I were you, you’ll want at least 4 nodes before LST imo.
